Raw Carrot Cake Energy Bites

Serves: 6

Ingredients:

  • ½ cup gluten free rolled oats
  • ½ cup buckwheat groats (soaked for 1 hour)
  • ½ cup homemade raw almond butter (to make simply place 1 cup of raw almonds into a food processor with a pinch of sea salt and process until it turns into almond butter scraping the sides occasionally. Save any leftovers to add to smoothies or to enjoy with apple slices)
  • ¼ cup raw walnuts
  • ¾ cup shredded carrots
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground ginger
  • 1 Tbsp. maca powder
  • ¼ cup ground flaxseeds
  • ¼ cup pure maple syrup
  • ¼ cup water
  • Shredded coconut for coating

Directions:

  1. Start by adding the oats, buckwheat, and the spices to the base of a food processor and process until the oats and buckwheat are finely ground.
  2. Add the maca, walnuts, shredded carrots, flaxseeds, and almond butter. Process again.
  3. Lastly, add the maple syrup, and water and process until everything comes together.
  4. Add the mixture to a large mixing bowl and refrigerate for 1 hour.
  5. After the chilling time, form into 6 large energy bites and roll into the shredded coconut.
  6. Store covered in the fridge.
